This is just one paragraph I pulled from a cheese processing plant explaining the aging process!
The following day, the newly formed cheeses are unmolded, salted, and allowed to dry for another day before being placed in the ripening room for aging. The ripening room is temperature and humidity controlled, mimicking the conditions of natural caves where some of the finest cheeses in the world are ripened. While aging, a certain mold is encouraged to grow on the surface of the cheese, and this mold creates the special rind that protects the outer edges so that the right moisture content and acidity levels are maintained within. The amount of surface covered by this mold will also determine its flavor. We have 12 lb., 7 lb., and 1/2 lb. wheels, each distinctly different in flavor as they age. Our cheeses age for a minimum of eight weeks before they are introduced to you!
