There are more issues than just his weight regarding the movies Steven is making currently. For one thing, Hollywood will not touch him with a bargepole, regardless of his weight. He does not have the backing of any of the people he used to, and without that, he will not get the good scripts and good directors he needs to make the sort of movies he used to. Not to mention the fact that his kind of "action" movie is very much out of style. His brand of realistic martial arts work does not dazzle the way wire work and monkey kung fu does, and the latter seems to be the kind of thing people going to action movies want to see these days (or, at least, the only kinds of movies the studios will release).
Secondly, bleating on and on and on about the "good old days" will not bring them back, no matter how heartily you might wish it. If you want the same kind of movies now as he made in the early nineties, you're going to be in for a big disappointment. There may be other reasons besides his age and weight why he doesn't kick ass the way he used to - like, maybe he doesn't want to.
I can see by your comments that you're one who wants Steven to stay 39 years old forever. It isn't realistic. Should he lose weight? Probably. Will he? That's up to him (according to the one article posted here recently, he's supposed to have lost 24 lbs by the start of his next movie). Me, I'm just grateful he's still making movies at all. And if the OFAK trailer is anything to go by, he's still got the moves, at speed with no camera tricks, that he used to, regardless of his weight.
Face it, Pottsy: it's not 1990, Steven's not 39 years old any more, Hollywood has changed and Steven is persona non grata among the suits who run the show these days.
If you find watching Steven's recent movies so distasteful to your sensibilities, then I suggest you don't watch them.
And here's a thought, about US3, in the unlikely event that it is going to get made... Casey Ryback has been a cook for 10 years. It would be perfectly logical for Ryback to be heavier than he was the last time we saw him. Oh, the horror! <evil grin>
